This weekend, we’re holding a Halloween party for about 20 close friends and family. Although we are really looking forward to seeing everyone, we’re struggling a little bit with the menu. See, of the 20 people coming, this is the breakdown of their eating habits:
1 diabetic
4 paleo
5 gluten-free (counting the 4 paleos)
2 vegetarians
1 peanut allergy
So of course, there’s no way we could get by with serving a pizza, or a 6-foot sub, or even pre-made appetizers from the big box store. We’ve had to simplify things quite a bit (lots of fresh veggies, plus a few dishes each person can eat), and have come up with a menu of snacks that should tide everyone over nicely.
The biggest challenge we had was with dessert, especially with the gluten-free/paleo folks. When I found this recipe online, I knew it was the perfect choice. It’s gluten-free and peanut-free, but loaded with rich chocolate and almond butter. If you decide to try it, I hope you’ll let us know hw it came out in the comments!
Ingredients:
- 1 cup semi-sweet chocolate morsels
- 1/2 cup almond butter
- On very low heat, melt chocolate chips in a sauce pan or double boiler.
- With a clean/unused paint brush, paint melted chocolate into candy molds.
- Put in the freezer for 10 minutes.
- Fill hardened chocolate molds with almond butter.
- Paint chocolate over the top to cover the almond butter.
- Place in freezer for 10 minutes or until completely hardened.
- Carefully “pop” candy out of molds.
